This year I wanted to make Easter cupcakes and I wanted the end result to be something that hasn’t hit Pinterest yet. What I arrived at was a simple marriage of Cadbury Mini Eggs nestled into an edible nest atop green coconuty frosting grass. To add charm, I ordered pearlized white picket fence cupcake wrappers to envelop the Easter cupcakes. It kind of looks like a birdie decided to make a home for his babes right in your backyard–well, if you have a white picket fence surrounding pastel grass.

Tip: Use an Upside-Down Lid with a Tab to Grip as a Tray While Making Treats

Ingredients for My Easter Cupcakes

  • Cadbury Mini Eggs
  • Rolo Chewy Caramels ~ Regular or Mini (I used regular but minis come unwrapped)
  • Snyder’s of Hanover Snaps Pretzels or Mini Pretzels
  • Coconut Flakes
  • 16 oz. Frosting
  • Green Food Coloring
  • Confetti Cupcake Mix and Required Listed Ingredients
  • Pearlized White Picket Fence Cupcake Wrappers

My Easy Step-by-Step Directions

  1. Make and bake confetti cupcakes based on the package instructions.
  2. Take 16oz. of frosting and mix in desired amount of green food coloring
  3. Take coconut flakes and mix in similar amount of green food coloring*.
  4. Frost cupcakes and sprinkle them with green coconut flakes.
  5. Place them inside white picket fence cupcake wrappers.
  6. Evenly space pretzel squares on top of wax paper on a baking sheet.
  7. Add a Rolo to the middle of each pretzel square.
  8. Bake for 2-5 minutes at 200 degrees watching carefully. (You want the chocolate soft but not melty.)
  9. Take out of the oven and don each confection with a Cadbury Mini Egg, gently pressing them into place.
  10. Place your nested eggs (or cupcake toppers) atop your Easter cupcakes!

* {Pretend Confectioner} Ashley’s Tip:

We liked that our coconut grass had variance to it, but if you want your Easter Cupcakes’ grass to be monotone you can add a little water to the food coloring and pour the diluted mixture over top of the coconut flakes to add an even all-over color.
