Preheat oven to 350°
Roll out the top and bottom pie crusts, set side.
Cut sausage links into 1-inch pieces. Cook in skillet over medium heat, then place in a large bowl.
Add hard-boiled egg, cheeses, parsley, salt, and pepper. Mix
Add uncooked egg and continue mixing thoroughly. If mixture is not holding together, add an additional egg.
Place bottom pastries into pie pans, dip mixture into pie pans.
Cover with top pastries.
Pinch edges to seal, cut steam vents into top pastries.
Brush top pastries with melted butter.
Bake for 35 minutes or until golden brown.
