Easter Pie Recipe

Don't wait until Easter to try this amazing pie! This recipe makes two pies.

Ingredients

  • 2 9-inch double pie crusts
  • ¾ lb Italian sausage links (ground saudage is okay too)
  • 6 large hard-boiled eggs, diced
  • 1 cup Cheddar cheese, shredded or diced
  • ½ cup Provolone cheese, shredded or diced
  • 1 ½ cup ricotta cheese
  • ½ bunch fresh parsley, chopped
  • salt and pepper to taste
  • 1 large egg
  • ¼ cup butter, melted

Instructions 

  • Preheat oven to 350°
  • Roll out the top and bottom pie crusts, set side.
  • Cut sausage links into 1-inch pieces. Cook in skillet over medium heat, then place in a large bowl.
  • Add hard-boiled egg, cheeses, parsley, salt, and pepper. Mix
  • Add uncooked egg and continue mixing thoroughly. If mixture is not holding together, add an additional egg.
  • Place bottom pastries into pie pans, dip mixture into pie pans.
  • Cover with top pastries.
  • Pinch edges to seal, cut steam vents into top pastries.
  • Brush top pastries with melted butter.
  • Bake for 35 minutes or until golden brown.
