By cooking this all day in a slow-cooker, you'll avoid that dried-out corned beef of days past.
- 4 lb orned beef brisket with spice packet
- 4 large carrots, peeled and cut julienne
- ½ head cabbage, coarsely chopped
- 10 small red potatoes, washed and quartered
- 1 large onion, peeled and cut into bite-sized strips
- 4 cups water
- 6 ounces beer or club soda
Wash, peel and cut carrots and onion. Place in slow cooker
Cut and wash cabbage. Place in slow cooker.
Wash and quarter red potatoes. Place in slow cooker.
Pour water into slow cooker.
Place brisket on top.
Pour soda (beer) on top of brisket.
Sprinkle spice packet over brisket.
Cover and cook on high.
Cook for 8 hours, checking often and basting if necessary.
At 8 hour mark, stir in cabbage.
Cook an additional hour.
