Last year a friend of ours hosted a St. Patrick’s Day party and it was so much fun.  Everyone brought green desserts and St. Patrick’s theme inspired food.  It was a beautiful Spring day the kids enjoyed playing outside and filling up on all the green goodies.  There are two great tips, celebrate the holiday with your neighbors and friends, it is fun and important to get together and enjoy food and friendship.  Secondly, keep it easy on your budget by asking others to bring something.  You pick the theme and assign people desserts, drinks, sides, paper products, and utensils.  This makes it easy on everyone’s budget, and it’s always fun to try out your friends’ recipes and treats.

I made these adorable mini rainbow cupcakes.  The kids loved these, I made these for my son’s school classes as well and they were a huge hit, we are talking cupcake, candy and marshmallows, you can’t go wrong with that.  I baked mini cupcakes, topped with blue frosting and then used mini marshmallows for clouds, you just cut a small slit in them to help hold the Sour Patch Rainbow candy.

I used Wilton Color Mist spray to make gold Oreos and used these on top of a mini cupcake as well.  Super easy to make, super cute and definitely St. Patrick’s Theme Inspired.  I found the Wilton Color Mist at Party City.  I laid the mini Oreos on a paper towel lined baking sheet and lightly sprayed them, waited about 5 minutes, flipped them and sprayed the other side as well.  My boys actually sprayed these and loved it.  I placed these on green frosted mini cupcakes, they came out super cute.

I also brought Rice Krispie Treats, they are my favorite.  If you read my blog you will see theme colored Rice Krispie Treats with whatever holiday we are celebrating at the time.
