I mentioned a little while ago that I have a huge love for Mason jars. I use them for just about anything, right now I’m drinking a smoothie out of one.

I kept seeing recipes on Pinterest for Mason jar salads, and I was really skeptical but intrigued. The school year will be starting soon, which means I’ll be packing lunches for myself again in a few short weeks.

I love the idea of making a few salads in advance and grabbing one on the way out the door in the morning.

I decided to make one in advance to try it, and surprisingly it was a huge success! The lettuce was crisp and delicious even though it sat in my fridge for over 3 days.

I think you can layer whatever you want in the jar as long as the salad dressing doesn’t touch the lettuce.

For this salad I layered:

vinaigrette
avocado
pineapple
cooked shrimp
lettuce

It was great! This is going to make packing lunches for work so much easier and healthier.
